It's been gray in LA, ya'll! Since its been gray, I have been drinking alot of tea, spending time at home and doing face masks - all good things that involve HONEY. To be more specific, I have been working alot lately with herbal infused honey.

You can put honey in your sodas & alcoholic drinks, on your breakfast, on your face, pour it on your ice cream, put it in your lemonade, add it to salad dressing or your meats to be grilled, put it in your pasta the options are endless! Who said nurturing yourself has to be flavorless!? A half a tea spoon of honey a day can have an enormous effect on your health, well being and even your allergies!

As Susan Weed said "honey has been regarded as a healing substance for thousands of years. Greek healers relied on honey water, vinegar water and a combination of honey/vinegar water as their primary cures. An egyptian medical text dated to about 2600 BCE mentions honey 500 times in 900 remedies!"

So, what makes honey so special?

Raw honey is an anti-septic that never spoils & is a good source of Vitamins B, C, D & E. ! It can destroy parasites, viruses, bacteria and even some tumor cells.

Honey is hygroscopic, drawing moisture out of the environment and dehydrating bacteria.

It is anti-bacterial! Counters infections on the skin, in the intestines, respiratory system and throughout the body. The mild acidity and low-level hydrogen peroxide amounts assist in tissue repair and contribute to the antibacterial activity of honey.

Honey is Hydroscopic! Meaning water loving and holds moisture in place.

Heals wounds such as insect bites, skin ulcers, and bruises - counters asthma and soothes your sore throat! When used topically for wounds etc, its dilution with body fluids produces hydrogen peroxide. As a result, hydrogen peroxide is released slowly and acts as an antibacterial agent.

When applied to your face - a honey facial leaves your skin smooth and moist! It is FULL of antioxidants.

When combined with herbs - you not only reap the benefits of the golden nectar - but you also receive the nutrients from the plants of which it is infused.

How to make an herbal honey:

Chop up the herb(s) of your choice

Place herb(s) into a wide mouth jar and fill almost to the top

Pour honey into the jar, mixing it into the herb with a skewer, add a little more honey

Cover tightly and label right away!

Place in sunny window sill for atleast A week, periodically tipping upside down

Taste after a week and if desired flavor is reached - you may strain out plant material.

*I do not strain my plant material - this is up to you.

If you would like to strain your herbal infused honey, place sealed honey jar in very hot water to help liquify before attempting to strain.
